Berry Galette

Let's whip up a delightful berry galette, bursting with juicy summer flavors! This recipe is perfect for both experienced bakers and beginners, and it's easily adaptable to your taste and preferences.





Ingredients:

  • For the Crust:

  • 1 1/2 cups all-purpose flour

  • 1/2 teaspoon salt

  • 1/2 cup cold unsalted butter, cubed

  • 3-4 tablespoons ice water

  • For the Filling:

  • 3 cups mixed berries (strawberries, blueberries, raspberries, blackberries)

  • 1/4 cup granulated sugar

  • 1 tablespoon cornstarch

  • 1 tablespoon lemon juice

  • 1 egg yolk, beaten with 1 tablespoon milk (optional, for egg wash)

Instructions:

  1. Make the Crust: In a large bowl, whisk together flour and salt. Using a pastry cutter or your fingertips, work in the butter until it resembles coarse crumbs. Gradually add ice water, a tablespoon at a time, until the dough comes together. Form into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  2. Prepare the Berries: While the dough chills, wash and dry your berries. Gently toss them with sugar, cornstarch, and lemon juice in a bowl.

  3. Assemble the Galette: Preheat oven to 400°F (200°C). On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer it to a parchment-lined baking sheet.

  4. Spread the berry mixture in the center of the dough, leaving a 1-2 inch border. Fold the edges of the dough over the filling, creating a rustic pleat.

  5. Egg Wash: Brush the edges of the dough with the egg wash for a golden brown finish.

  6. Bake: Bake the galette for 40-45 minutes, or until the crust is golden brown and the filling bubbles.

  7. Cool and Serve: Let the galette cool slightly on the baking sheet before transferring it to a wire rack to cool completely. Serve warm or at room temperature with whipped cream, ice cream, or a sprinkle of powdered sugar.

Tips and Variations:

  • For a richer crust, use a combination of all-purpose flour and whole wheat flour.

  • Feeling adventurous? Add a touch of cinnamon, nutmeg, or cardamom to the berry mixture for extra warmth.

  • If you don't have fresh berries, you can use frozen berries, but thaw them first and drain any excess liquid.

  • Want a vegan option? Substitute the egg wash with a mixture of 1 tablespoon aquafaba (the liquid from a can of chickpeas) and 1 tablespoon maple syrup.

  • Get creative with the toppings! Drizzle the galette with honey, almond extract, or even a balsamic glaze.
