This is a simple hassle-free and easy to make dessert that comes along very quickly prepared during special or festive occasions. I made this tapioca pudding with shredded carrots (You can also substitute opu squash, pumpkin, or beetroot as I have done in the past) and flavored it with cinnamon, nutmeg and cardamom. Undeniably, this is an instant mood shifter if you are craving for fall or festive flavors of sorts.
